Aloo Bhindi Masala

Ingredients
Aloo (Potatoes) 2
Bhindi (Okra) 250 gms
Red onions 2 sliced
Tomato 2 chopped
Green chillies 2 chopped
Ginger paste 1/2 tsp
Garlic paste 1/2 tsp
Curry leaves 6
Cumin seeds 1/2 tsp
Cumin powder 1 tsp
Red Chilli Powder 1 tsp
Turmeric powder 1/2 tsp
Coriander powder 1 tsp
Amchur (dry mango powder) 1/2 tsp
Hing a pinch
Salt to taste
Oil 3 tbsp
Cilantro chopped


Method
Boil the potatoes. Peel and chop into small pieces
Cut bhindi into 1 inch long pieces.
Heat oil in a pan. Add cumin seeds.
Once they sizzle add hing, green chillies, ginger, garlic, curry leaves and turmeric
Stir fry for a min and add onions and salt
Saute till they become translucent
Add bhindi and mix well
Cover and cook on low heat till the bhindi becomes soft
Add tomatoes and cook for a few mins
Add spices - coriander, cumin, red chilli, amchur powder
Stir till the masala and vegetables are properly mixed.
Garnish with cilantro
Serve hot with chapati or roti
